Iko Iko Bell Pepper

Iko Iko Bell Peppers are a varietal which start off purple and can turn either orange or red when ripened. I didn't give them the time to ripen since I already had red and orange bell peppers in my backyard garden. Why not use these while purple to add nice color to your salads or even a Paella?
